Grown in the unique microclimate of the highlands of northern Guatemala (4500 ft +), coffee from the Huehuetenango region often displays wine-like fruit flavors (in our case, stone fruit) and a rich sweetness that's enhanced by deep chocolate overtones.
Flavors:
This incredibly easy to drink, yet full-bodied, coffee features flavors of fudge brownie, stone fruit and cane sugar with a pleasant, sweet finish. It's a favorite of many of our customers and a personal favorite of one of our company founders (also a roaster)! Enjoy this fine Specialty Coffee as an all-day drinker anytime the mood strikes you. It's even great reheated later in the day and stands up well if you forget to turn off the heating element of your drip coffee maker (which, of course, never happens to us...ahem).
Recommended Roast Level:
Medium
Specialty Coffees shine at a Medium Roast level bringing out the best balance of all the attributes that a coffee has to offer. But, this coffee can tolerate a darker roast as well. The darker the roast level, the less prominent the flavors unique to that coffee are, especially the lighter and more acidic flavors - in this case, the stone fruit flavors. This can sometimes create a coffee that is flat, two-dimensional and uninteresting.
Deliciously Dark!
However, our new "Deliciously Dark!" roast is altogether different! As an artisan roaster, we maintain careful control of the roast in order to maximize the natural chocolatey flavors of excellent Guatemalan coffees. All without creating ANY flavor defects. Instead of ashy or burnt flavors that are common among dark roasts, you'll get a full bodied, flavorful cup of coffee that gives you all that a Guatemalan dark roast has to give with no nasty, burned or ashy taste.

Better Coffee:
We roast only the highest grade of coffee, Specialty Coffee, which represents the top 10% of all coffee sold in the world. Don't be misled by marketing terms like "Gourmet Coffee" (which has no definition) or Premium Coffee (think Starbucks) which is a lesser grade than Specialty.
Unfortunately for coffee lovers, the vast majority of retail coffees available to the consumer are lesser grades, with the bulk of coffee sold in America (Exchange Grade/Commodity Coffee) falling as low as 40 points below Specialty Coffee grading. Most of that sits in warehouses or on store shelves for unknown and undisclosed lengths of time. And, since most coffees don't display a roast date, you have no way to know how old they really are.
At best, most coffees function reasonably well as cheap, competent caffeine delivery systems. But, if you're a coffee lover, you'll have a difficult time finding great coffee on any store shelf. In fact, you've probably never tasted Specialty Coffee or Truly Fresh Coffee™ unless you've actively searched for it online.
Our coffees are roasted in small batches (less than 25 lbs ea) so that we (not a computer) can control every aspect of the roasting process using old-world, artisan roasting techniques. This allows us to pay close attention to the unique, distinct character of each coffee that we're roasting and enhance those characteristics and flavors by adjusting the roast accordingly. And, we stamp the roast date on every box or bag.
Fresher Coffee:
Our coffee is roasted to order in small batches and then hand-packed into standing, resealable, box pouches. The one-way valve allows your freshly roasted coffee to naturally off-gas CO2 while inside the bag. This enables us to pack your coffee almost immediately after roasting so that your order is exceedingly fresh, never having sat in inventory or on some warehouse shelf. In fact, we have no roasted coffee inventory - zero, zip, zilch, nada! Your coffee is roasted only after you order it and then shipped the very next day* so that it arrives at your door at its peak of flavor and freshness. And you'll know your coffee is fresh, because we stamp the roast date on every box and bag.
